Our approach to developing bespoke new meat products…

“We work closely with our customers to understand their requirement. For instance, we recently created a high quality chicken kiev product. After formulating an initial recipe, we tested it here and then worked out a multiple quantity recipe. The ingredients were sourced and then a sample batch was produced for customer approval.

We’ve also started producing pies for a new gourmet pie company who have their own special recipes for pastry and fillings. So we worked directly with them to develop the exact mixes they needed, creating all the savoury fillings in our bratt pan. One of our favourites is the chicken, white wine and tarragon – made using fresh hand-diced chicken breast, white wine and fresh tarragon (we even grow a few herbs ourselves!).”


What makes us special?

“Because we are full craft butchers (taking meat in carcase form and producing everything from it), we have so much scope and versatility to produce any type of meat-based product.”

Our latest products include…

“Handmade high quality chicken kiev for Centre Parcs, a range of pulled pork in a variety of spicy sauces (these are really popular at the moment) and lately a range of gourmet, hand pressed burgers in a seles for a new trendy burger bar.”


My personal favourite…

“A real success of our bespoke service has been the steak and ale purse: the filling is made using tender diced steak, tasty gravy and ‘Roaring Meg’ ale from a local micro-brewery. The puff pastry is homemade and formed into an attractive purse shape by hand. Then they’re pre-glazed, ready for the oven, and dusted with paprika. No wonder they’ve sold in their thousands over the last ten years!”
