Pork is sourced from R.B. Elliot & Sons Ltd in Derbyshire who have extremely high standards, the pigs we use mainly come from a couple of farms local to us (within 15 miles) and they hand pick our pigs to ensure the high specification we require is achieved.  The sows are kept outdoors, once weaned the pigs are fattened in straw yards.  We mostly buy in carcass form ensuring we know the correct weight, grades, fat coverage  and sex of the pig (Only female pigs are used to eliminate that ‘piggy’ taste)
